See What You Missed Jules!!!

 

The Smorgashbord

So, we have this family friend that had two daughters graduate from college-different colleges, different weekends, same month- and she wanted to have a HUGE graduation party for them. Could I make cupcakes for them, she asked. Of course I would, I mean I had only grown up with these girls, and plus, I heard a rumor that they thought my lemon cupcakes were to die for. How could I refuse???

 

Then she sprung it on me….300 cupcakes, various flavors, needed Sunday. WOW! I have never made that many cupcakes in my kitchen. Where on Earth would I put them all? Luckily, there is a little cupcake shop right down the street that would sell me containers that would hold a dozen cupcakes and stack neatly. Problem solved. Let the baking begin.

It took all day Friday to bake the cupcakes. I made lemon, strawberry, chocolate cinnamon, rocky road (chocolate cake with mini marshmallows bake inside), white cake with Andes candies baked in, and a plain chocolate cake.

Saturday and Sunday I decorated them all. Now I could have decorated them all on Saturday but keeping them cool in the hot house was an issue and the lemon ones had a lemon cream cheese icing and I didn’t think that food poising was really an appropriate gift for the girls, so I left those for Sunday. I also made peanut butter icing for the plain chocolate cake. (I call those E.T., see if you can figure out why) I decided that no graduation party was complete without chocolate mortar boards so I decorated the mint cupcakes that way. You can see from the pictures that they came out really cute!

A great time was had by all that attended and the cupcakes were a huge hit! Congratulations Margaretta and Charlene!!!
